Emeril’s Crazy Nachos

Try serving these mouthwatering nachos, courtesy of chef Emeril Lagasse, at your game-day party (or any gathering fit for delicious finger foods).

Ingredients

Serves 6 to 8

  • Crispy Tortilla Chips
  • 4 cups Slow-Cooker Pulled Pork
  • 2 1/2 cups shredded Monterey jack or pepper jack cheese
  • 2/3 cup thinly sliced banana peppers or other pickled peppers, such as cherry or jalapeno
  • Emeril’s Queso, warmed
  • 1/4 cup finely chopped scallions, green parts only, for garnish
  • 2 tablespoons finely chopped fresh cilantro, for garnish
  • Chipotle Salsa, for serving

Directions

  1. Preheat oven to 400 degrees.
  2. Layer half of the chips, pork, cheese, and banana peppers in a large baking dish; repeat with a second layer of each. Transfer to oven and bake until cheese is melted and pork is warmed through, 8 to 10 minutes.
  3. Remove from oven and top with warmed queso. Garnish with scallions and cilantro; serve immediately with salsa.

(Makes 24)

Ingredients

  • 24 large dates, pitted
  • 12 slices bacon, halved crosswise
  • 1/3 cup crumbled Stilton cheese

Directions

  1. Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. Line a baking sheet with parchment paper and fit with a wire rack; set aside.
  2. Halve dates lengthwise being careful not to cut all the way through. Place a small amount of cheese in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.
  3. Place dates on prepared baking sheet. Bake until bacon is cooked through, 20 to 25 minutes.

Scotch Egg Recipe

A hardboiled egg encased in sausage meat, rolled in breadcrumbs and then fried. fried. fried.

INGREDIENTS:

  • 6 hard-boiled eggs, well chilled (i try to cook them to just past soft boiled stage, then stick them in the coldest part of the fridge to firm up)
  • 1 pound good quality sausage meat (i used ground turkey meat, seasoned with sage, white pepper, salt and a tiny bit of maple syrup)
  • 1/2 cup AP flour
  • 1-2 eggs, beaten
  • 3/4 cup panko-style bread crumbs
  • Vegetable oil for frying

DIRECTIONS

  1. peel eggs; divide sausage into 6 portions.
  2. roll each egg in flour then press and shape a portion of the sausage around each egg.
  3. dip sausage-wrapped eggs into beaten egg and roll in panko.
  4. heat oil to 350˚F .
  5. cook each egg for 4-5 minutes (longer if shallow frying–constantly turn the eggs around for best results) or until sausage is cooked and browned.

Oh God, Don’t Stop! Jalapeño Poppers

Ingredients:

  • 1/3 cup of flour
  • 1/3 cup of bread crumbs
  • 1 tablespoon of honey
  • 2 tablespoons of milk
  • ½ teaspoon of paprika
  • 3 ounces of cream cheese
  • 2 handfuls of shredded jack/mozzarella cheese
  • 1 egg
  • 5 jalapeños spilt lengthwise, stalks cut, seeds and veins removed

Directions:

  1. Preheat the oven to 350 degrees F. Mix the cheeses with the honey and paprika. Spread enough of the cheese mixture to just fill the hollow jalapeños.
  2. Mix up the egg with the milk and paprika. Separate the flour, egg mixture, and breadcrumbs in separate bowls. Dip each cheesy jalapeño first in flour, then egg mixture, and finally breadcrumbs. Set out on a foil covered baking pan.
  3. Shove the baking pan full of prepped jalapeños in the oven. Bake until the breading browns and the cheese begins to ooze out the side. (Approx 30 min) Now you’re good to serve it up on a platter with ranch or ketchup.

Super Bowl Recipes: Party-size Sausage Calzone

Brought to you by The Kitchen at Johnsonville Sausage, this recipe is an Italian twist to your old sausage recipes.
INGREDIENTS:
  • 1 pkg. (19.76 oz.) Johnsonville® Italian Hot Sausage Links
  • 1 cup (4 oz.) shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 tsp. dried parsley flakes
  • 1/8 tsp. each garlic powder, onion powder, salt, and pepper
  • 1 loaf (1 lb.) frozen bread dough, thawed
  • 1 jar (15 oz.) pizza sauce

DIRECTIONS:

  1. Pan-fry or broil sausage according to package directions. Cut into ¼-in. slices. In a large bowl, combine the mozzarella cheese, ricotta, egg, parsley and seasonings. On a lightly floured surface, divide dough in half. Roll each piece into a 12-in. circle. Carefully place one circle on a lightly greased baking sheet.
  2. Spoon ½ cup sauce, half the cheese mixture and half the sausage onto half of the circle being careful not to spread ingredients all the way to the edge. Brush edges of dough with water; fold dough over filling and pinch edges to seal. Repeat with remaining dough and filling.
  3. Bake at 350˚ for 25 to 30 minutes or until golden brown. Serve with extra pizza sauce.

This recipe serves 4.
