NASCAR Tailgating Recipes: Tex-Mex Barbecue Chicken

Ingredients

  • 1/2 cup barbecue sauce (your choice)
  • 1/3 cup Lemon Juice from Concentrate
  • 1 envelope (1.25 ounces) taco seasoning mix
  • heavy duty aluminum foil
  • 4 ears corn, shucked
  • 4 fresh chicken leg quarters

Directions

  1. Preheat grill to medium-high, according to manufacturer’s directions.
  2. In a small bowl, add barbecue sauce, lemon juice and taco seasoning.
  3. Wrap each ear of corn in foil packet, leaving room for heat circulation.
  4. Grill chicken for 40 to 50 minutes or until done (internal temp 180° F).
  5. Baste with barbecue sauce mixture and turning occasionally.
  6. Grill corn packets on covered grill, turning once, 16 to 20 minutes or until corn is tender.

Makes 4 servings.

NASCAR tailgating recipes: Barbecued Beef and Corn Muffins

In honor of Jamie McMurray’s win on the 52nd annual Daytona 500 victory in a gripping finish on Sunday at Daytona International Speedway, we’re going to post NASCAR tailgating recipes this week, starting with the Barbecued Beef and Corn Muffins.

Cooking Time: 8 min.

Ingredients

  • 1 – pound beef round tip steaks, cut 1/8 to 1/4 inch thick
  • 1 – medium onion, cut into thin wedges
  • 2 – teaspoon vegetable oil
  • 3/4 – cup prepared barbecue sauce
  • 4 – corn muffins, quartered

Directions

  1. Cut steaks crosswise into 1-inch wide strips and reserve.
  2. In a large nonstick skillet, you want to cook and stir onion in oil over medium-high heat for 3 minutes or until lightly browned.
  3. Remove and keep warm.
  4. Add beef strips (half at a time) to skillet; cook and stir for 2 to 3 minutes.
  5. Add barbecue sauce and onions. You want to heat until hot.
  6. Place an equal amount of beef mixture over corn muffins.

Makes 4 servings

If so, you’ve probably contributed to the second-largest US food consumption recorded in history. This week, we’ll be posting some of the Super Bowl Sunday recipes that went cooking around the US, starting with Food City TV’s “BBQ Pork and Bacon Sliders.”

Ingredients:

  • 1 tbsp. olive oil
  • 1 green pepper, diced
  • 1 red onion, diced and divided
  • 3 cups pulled pork BBQ
  • 6 slices bacon, cooked and crumbled
  • 1 tomato, diced
  • 1 cup shredded Cheddar cheese, divided
  • 1 dozen mini dinner rolls

Preparation Directions:

  1. In a large skillet heat oil, sauté green pepper and ½ of the onion until soft. Add BBQ pork, bacon, and ½ cup cheese; cook until heated through.
  2. Slice dinner rolls in half horizontally and place bottom half in baking pan, top with BBQ mixture, tomato, remaining ½ onion and remaining ½ cup cheese. Cover with top half of rolls. Cover with foil.
  3. Bake at 350 degrees for 20 minutes. Cut and Serve.
