In honor of Jamie McMurray’s win on the 52nd annual Daytona 500 victory in a gripping finish on Sunday at Daytona International Speedway, we’re going to post NASCAR tailgating recipes this week, starting with the Barbecued Beef and Corn Muffins.

Prep Time: 10 min.
Cooking Time: 8 min.

Ingredients

  • 1 – pound beef round tip steaks, cut 1/8 to 1/4 inch thick
  • 1 – medium onion, cut into thin wedges
  • 2 – teaspoon vegetable oil
  • 3/4 – cup prepared barbecue sauce
  • 4 – corn muffins, quartered

Directions

  1. Cut steaks crosswise into 1-inch wide strips and reserve.
  2. In a large nonstick skillet, you want to cook and stir onion in oil over medium-high heat for 3 minutes or until lightly browned.
  3. Remove and keep warm.
  4. Add beef strips (half at a time) to skillet; cook and stir for 2 to 3 minutes.
  5. Add barbecue sauce and onions. You want to heat until hot.
  6. Place an equal amount of beef mixture over corn muffins.

Makes 4 servings

Super Bowl Recipes: Ground Beef Nachos

Flavorful nachos with the works!

INGREDIENTS:

  • 1 package of ground beef (the amount is up to you)
  • 1 can (16 ounces) refried beans
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup chopped bell green pepper
  • 1/2 cup chopped onion
  • 1 envelope of taco seasoning, about 1 ounce
  • 1 cup of grated cheddar cheese
  • 1 bag of plain tortilla chips

DIRECTIONS:

  1. Heat oven to 350°. Cook ground beef in a large saucepan or Dutch oven. Add all ingredients but the cheddar cheese and chips to the pot and simmer for 10 to 12 minutes. While it is simmering, pour the chips into a casserole dish.
  2. Spread hot mixture over the chips; sprinkle grated cheddar cheese on top and put in the oven for 20 minutes or until cheese is melted and browned.

Super Bowl Recipes: Game Day Seared Steak Sandwiches

Touchdown! Beef up your game day party with hearty hoagies everyone will love. Topped with grilled onions and cheese, these delicious steak sandwiches are at the top of their game and sure to become a fan favorite.

INGREDIENTS:

  • 2 teaspoons Nescafé Taster’s Choice 100% Pure Instant Coffee Granules
  • 1/2 teaspoon paprika or chili powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 pound (about 3/4-inch-thick) boneless sirloin steak, trimmed of fat
  • 1/3 cup water
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon granulated sugar
  • 1 teaspoon canola oil
  • 4 hoagie rolls
  • Grilled onions (optional)
  • Sliced Gruyère cheese (optional)

DIRECTIONS:

  1. Combine coffee granules, paprika, pepper and garlic powder in small bowl; stir until well blended. Sprinkle evenly over both sides of beef; let stand at room temperature for 15 minutes. Combine water, soy sauce, vinegar and sugar in small bowl; set aside.
  2. Heat large, nonstick skillet over medium-high heat. Add oil; tilt pan to coat bottom evenly. Add beef; cook for 4 minutes. Turn over; reduce heat to medium-low and cook for an additional 5 minutes or until desired doneness. Place beef on cutting board (save skillet with drippings); cover with foil. Let stand for 5 minutes.
  3. Place skillet with drippings over medium-high heat; add soy sauce mixture. Bring to a boil; boil, scraping bottom and side of skillet occasionally, for 2 minutes or until reduced to about 1/4 cup. Thinly slice beef diagonally. Divide beef between hoagies; drizzle with sauce. Top with grilled onions and cheese.

How to Make Sloppy Joes from Scratch

Sloppy Joes are a simple and tasty choice for any casual meal occasion. They are easy to make, and just about everyone loves these spicy sandwiches. There are several different types of canned Sloppy Joe sauce that can be added to browned ground beef. However, it is also very easy to make your own Sloppy Joe sauce.

When you learn how to make sloppy Joes from scratch, you can customize the seasonings to match your family’s taste buds. You can also control the quality and types of ingredients.

Preparing the Meat for Homemade Sloppy Joes

The first thing you will need to do select and brown the ground beef that you will use to make your Sloppy Joes. It is best to use ground round or ground sirloin, to minimize the amount of fat that cooks out of the meat. However, you can use any cut of ground beef. Simply brown the ground beef in a skillet and then drain off any excess fat before adding the sauce. If you like green peppers and onions in your Sloppy Joes, add diced ones to the meat after it begins to brown.

Note to Dieters: If you are counting calories or trying to cut down on your red meat consumption, you can use ground turkey instead of ground beef, or use a half and half mixture of ground turkey and ground beef.

Homemade Sloppy Joe Seasoning Sauce

While the ground beef is cooking, start putting your Sloppy Joe sauce together. One batch of this recipe will work for up to 1 1/2 pounds of cooked meat. If you are cooking more meat, simply adjust the recipe proportionally for each additional pound of meat.

Ingredients:

  • 1 15 ounce can tomato sauce
  • 1 Tablespoon Worcestershire sauce
  • 1 Teaspoon ground mustard
  • 1 Teaspoon onion powder
  • 1/4 cup catsup
  • Salt to Taste
  • Pepper to Taste (black or cayenne)

Instructions:

Simply mix the ingredients together in a bowl.

Stovetop Simmering

To finish cooking your Sloppy Joes on the stove, simply pour the sauce over the cooked meat and simmer for twenty minutes.

Slow Cooker Simmering

If you would like to come home from work to find a Sloppy Joe meal ready and waiting, simply place the browned meat and sauce in the your Crock Pot or other slow cooker appliance and set the dial on low. They will be ready to eat within a few hours, but you can leave them simmering for up to 10 hours.

Serving Your Sloppy Joes

Simply spoon the prepared meat on a fresh hamburger bun, and you’ll have a hearty, homemade meal that tastes great and is good for you.
