White Chili Recipe


INGREDIENTS

  • 1 lb large white beans, soaked overnight in water, drained
  • 6 cups chicken broth
  • 2 cloves garlic, minced
  • 2 medium onions, chopped (divided)
  • 1 Tbsp olive oil
  • 2 4-ounce cans chopped green chilies
  • 2 tsp ground cumin
  • 1 1/2 tsp dried oregano
  • 1/4 tsp ground cloves
  • 1/4 tsp cayenne pepper
  • 4 cups diced cooked chicken
  • 3 cups grated Monterey Jack cheese
  • 1 jalapeno or serrano pepper, chopped (optional)

DIRECTIONS:

  1. Combine beans, chicken broth, garlic and half the onions in a large soup pot and bring to a boil. Reduce heat and simmer until beans are very soft, 3 hours or more. Add additional water (or watered-down broth), if necessary.
  2. In a skillet, sauté remaining onions in oil until tender. Add chilies and seasonings and mix thoroughly. Add to bean mixture. Add chicken and continue to simmer 1 hour. Check seasoning, add jalapeno or serrano to level of desired hotness.
  3. Serve topped with grated cheese. Garnish with cilantro, chopped fresh tomato, salsa, chopped scallions, and/or guacamole. Serve with fresh warmed flour tortillas or tortilla chips.

Tailgating Recipes: Super Bowl Dips, Chili and Sangria

Boilermaker Tailgate Chili

This is a combination of many different tomato-based chili recipes.

INGREDIENTS

  • 2 pounds ground beef chuck
  • 1 pound bulk Italian sausage
  • 3 (15 ounce) cans chili beans, drained
  • 1 (15 ounce) can chili beans in spicy sauce
  • 2 (28 ounce) cans diced tomatoes with juice
  • 1 (6 ounce) can tomato paste
  • 1 large yellow onion, chopped
  • 3 stalks celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 green chile peppers, seeded and chopped
  • 1 tablespoon bacon bits
  • 4 cubes beef bouillon
  • 1/2 cup beer
  • 1/4 cup chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 teaspoons hot pepper sauce (e.g. Tabasco™)
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 1 (10.5 ounce) bag corn chips such as Fritos®
  • 1 (8 ounce) package shredded Cheddar cheese

DIRECTIONS

  1. Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
  2. Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
  3. After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
  4. To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.

Wegmans Turkey Chili

Texas Red Chili

Whole dried ancho and guajillo chiles (earthy.com) heat things up in an authentic and easy recipe for this crowd-pleasing classic.

INGREDIENTS:

(Makes about 8 cups; serves 6 to 8)

  • 8 whole dried chiles (5 ancho and 3 guajillo or all ancho; about 3 ounces)
  • 3 tablespoons safflower oil, plus more as needed
  • 3 pounds trimmed beef chuck, cut into small pieces (1/2 inch or smaller)
  • Coarse salt and freshly ground pepper
  • 2 large onions, coarsely chopped (4 cups)
  • 7 to 8 garlic cloves, minced (5 tablespoons)
  • 2 jalapeno or serrano chiles, seeded if desired, minced
  • 2 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons dried oregano
  • 1 can (28 ounces) whole peeled plum tomatoes, pureed with their juice (3 1/2 cups)
  • 4 cups water, plus more if needed and for soaking
  • 2 to 3 teaspoons white vinegar, to taste

Directions

  1. Toast dried chiles in a dry skillet over medium-high heat until fragrant and blistered, 2 to 3 minutes per side. Remove stem and seeds; discard. Transfer chiles to a large measuring cup or bowl, and cover with hot water. Keep chiles submerged with a small bowl, and let soak for 30 minutes. Remove from water, and puree in a blender with 1/2 cup soaking liquid.
  2. Heat a large heavy pot over high heat. Add 2 tablespoons oil. Season beef with 2 1/2 teaspoons salt and 1/2 teaspoon pepper. Brown beef in batches, adding more oil as needed, about 10 minutes. Transfer to a plate.
  3. Add remaining tablespoon oil, the onions, garlic, and minced chiles to pot, and cook over medium-high heat until onions are translucent, about 5 minutes. (If the pan gets too dark, add a little water, and scrape up browned bits with a wooden spoon to deglaze.) Add cumin and oregano, and cook, stirring constantly, until fragrant, 30 seconds to 1 minute.
  4. Stir in browned beef and chile puree. Add tomato puree, water, and 1/2 teaspoon salt. Bring to a boil. Reduce heat, and simmer gently, partially covered, until meat is very tender and juices are thick, 2 1/2 to 3 hours. (Check pot once an hour for excessive evaporation; if chili seems dry, add a little water.) Season chili with salt, and stir in vinegar. Serve immediately (or refrigerate for up to 3 days, or freeze for up to 3 months; reheat in a pot over medium heat, stirring occasionally).

Old-Time Texas Chili Recipe by the BBQ Pit Boys

Check out this classic Texas Chili that’s been cooked up in the States since the mid 1800′s, and for good reason. In preparation for the Super Bowl, we bring you recipes from around the web for your game parties, starting with this yummy, super-easy chili over chips for a one-bite snack, which you can also serve in mugs topped with the cheese and chips.

INGREDIENTS:

  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 15-ounce can kidney beans
  • 1 10-ounce can diced tomatoes with green chile peppers
  • 1 1.25-ounce package chili seasoning mix
  • Salt and pepper to taste
  • 2 teaspoons chili powder, or to taste
  • 1 cup beer, or more as needed
  • 1 bag corn chips, for serving
  • 1 cup grated cheddar cheese, for serving

DIRECTIONS:

In a large saucepan over medium-high heat, cook beef and onion until meat is brown. Stir in beans, diced tomatoes, chili seasoning, salt, pepper, chili powder and beer. Reduce heat and simmer 2 hours. Taste and adjust seasoning with more salt and pepper if desired.

Place a heaping teaspoon of chili on top of each corn chip and top with a sprinkling of cheese. Serve warm.
